Easy-Breezy Pesto Chicken Sandwich

Ingredients

  • 2 large chicken thighs
  • 2 cups fresh sweet basil
  • 3 cloves of garlic
  • 2 tbsp of grated parmesan cheese
  • 3 tbsp pine nuts
  • ⅓   cup extra virgin olive oil
  • One loaf of bread of your choice
  • Two fresh tomatoes
  • 3 tbsp of butter

Instructions

  1. Thaw chicken, rinse basil and toast pine nuts.
  2. Blend basil and pine nuts.
  3. Add cheese and garlic.
  4. Drizzle in the olive oil and season.
  5. Boil the chicken thighs and shred into bite-sized pieces.
  6. Mix in the pesto.
  7. Toast and butter bread
  8. Add pesto chicken and tomatoes
  9. Slice and enjoy!
