Zucchini Bread Recipe

Ingredients

  • 1/2 large zucchini - grated
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla
  • 1/4 cup honey
  • 1/3 cup brown sugar
  • 1/2 cup white sugar
  • 1 cup unsweetened applesauce

Instructions

  1. Preheat oven to 375 degrees.
  2. Shred half of a large zucchini.
  3. Sprinkle ½ teaspoon of salt over the zucchini and set aside.
  4. Mix the flour, baking powder, baking soda, and cinnamon.
  5. In a separate bowl, beat one egg.
  6. Add in honey, brown sugar, white sugar, and vanilla– whisking the mixture between each ingredient.
  7. Combine the egg mixture with your dry ingredients.
  8. Add applesauce, then stir until fully combined.
  9. Pour off any excess water from the shredded zucchini, then add it to the batter.
  10. Grease a 9x5 loaf pan and pour the batter in.
  11. Bake for 50-60 minutes or until golden brown on top.
  12. Let cool for 10 minutes before slicing.
