Kimchi and Pork Cutlet Kimbap

Ingredients

  • 6 Nori sheets
  • 1 ½ cup short-grain / sushi rice
  • 1 large Japanese cucumber
  • 3 eggs
  • 3 Boneless pork loin chops
  • ½ cup of all-purpose flour
  • 1 egg
  • cup of breadcrumbs
  • ¾ cup of kimchi
  • 1 tbsp of sesame oil

Instructions

  1. Pound the pork loin to desired thickness. Dredge in flour, eggs then breadcrumbs.
  2. Shallow fry the pork loins until golden brown on each side.
  3. Cook the rice and toss in the sesame oil.
  4. Fry the eggs and slice into strips.
  5. Chop the kimchi and cucumber.
  6. Lay out all the components.
  7. Evenly spread on the rice with a spatula, leaving a 2-inch gap.
  8. Place the ingredients onto the rice and roll.
  9. Brush lightly with sesame oil.
  10. Slice with a clean knife.
