Protein Packed Breakfast Burritos

  • 1 burrito size spinach tortilla
  • 2 Tablespoons sausage
  • 2 eggs
  • ½ Tablespoon milk
  • Pinch of salt
  • Pinch of pepper
  • 2 Tablespoons cheddar cheese
  • 2 Tablespoons salsa or pico de gallo


  1. In a skillet, brown sausage. Remove from skillet onto a plate with a paper towel. Leave excess grease in skillet.
  2. In a large cup, combine eggs, milk, salt, and pepper. Mix well and pour into the warm skillet. Cook eggs.
  3. Warm tortilla in microwave for 10 seconds. Place scrambled eggs in the center of the tortilla with sausage, cheese, and salsa on top. Fold burrito.
