Cinnamon Oatmeal Cookie Recipe

  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 cup butter
  • 2 eggs
  • ½ tsp pure vanilla extract
  • 2 cups all purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 3 cups oats


  1. Soften the butter at room temperature or in the microwave. Combine the softened butter, sugar, brown sugar, eggs, and vanilla. Stir until the mixture is smooth and wet.

  2. In a large bowl, combine the flour, baking soda, cinnamon, and salt.

  3. Add the dry ingredients into the wet mixture in small portions at a time until they are completely combined.

  4. Add the oats to the dough and mix thoroughly.

  5. Roll the dough into golf ball sized balls and evenly space them out on a parchment paper lined cookie sheet.

  6. Press each of the dough balls with a fork to form the cookies shape.

  7. Bake in the oven at 375°F for 8-10 minutes, then remove and allow the cookies to rest on a cookie rack.
