Total Time 55 minutes

Ingredients

  • 1 head of cauliflower

For the batter:

  • 1 cup of water
  • 4 tbsp of all-purpose flour
  • A pinch of paprika
  • A pinch of salt

To coat in breadcrumbs:

  • 1 cup of breadcrumbs
  • 1 tbsp of coconut flakes
  • A pinch of salt

For the Spicy BBQ Sauce:

  • 4 tbsp of ketchup
  • 2 tbsp of maple syrup
  • 2 tbsp of soy sauce
  • 1 tbsp of chili flakes

To garnish:

  • A sprig of fresh spring onion
  • 1 tsp of coconut flakes

Instructions

  1. The first thing you need to do is prepare your cauliflower.

  2. Wash it and break it into small pieces.

  3. Now prepare the batter. Mix all the ingredients into a bowl until smooth.

  4. Prepare yourself a plate with the breadcrumb and coconut flakes mix, next to your bowl with the batter.

  5. Start dipping the cauliflower florets into the batter and then straight into the breadcrumb mix, until they are fully coated.

  6. Put into a baking tray and place into the oven, set to 375 F, for 25 minutes.

  7. While the florets are going through the first phase of their cooking process, you have to prepare the BBQ sauce.

  8. Mix all the ingredients for the sauce into a bowl. That’s it - there’s no cooking needed for that step.

  9. When the 25 minutes have passed, take the florets out and dip them into the sauce until perfectly coated.

  10. Now it’s time to place them back in the baking tray and finish them off with another 15 minutes in the oven. This will help the sauce to become sticky and caramelized.

  11. You can now serve them with a sprinkle of coconut flakes and some fresh spring onions.
