London Broil with Chimichurri Sauce

Ingredients

  • Marinade
  • 5-6 cloves garlic
  • 2 sprigs fresh oregano
  • 4 tablespoons Worcestershire sauce
  • 4 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • ½ teaspoon coarse salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon ground chili flakes
  • 3 tablespoons olive oil
  • 3-4 sprigs fresh thyme
  • 2 bay leaves
  • 1 ¾ pounds Top round Flank, or Skirt steak
  • Chimichurri
  • ½ bunch flat leaf parsley
  • ½ bunch cilantro
  • 1 sprig oregano
  • 3 garlic cloves
  • 2 small dried chilies
  • 3 tablespoons red wine vinegar
  • ½ cup olive oil
  • 1 lemon
  • salt

Instructions

  1. Peel and mince the garlic. Remove the stems from the oregano and mince it also. Transfer both to a bowl. Add in the Worcestershire sauce, balsamic, honey, salt, and pepper. Whisk well.
  2. Place the beef into a large resealable bag and pour the marinade in. Add the thyme and bay leaves before sealing and massaging the marinade into the meat with your fingers. Refrigerate for at least 1 hour to overnight.
  3. Take the meat out of the refrigerator for about 30 minutes before cooking and lightly oil a baking sheet lined with aluminum foil. Transfer the meat to the baking sheet.
  4. Turn on the oven to broil (heat coming from the top coito preheat while the meat rests.
  5. Wash the herbs, peel the garlic, and remove the stem from the oregano. Mince the garlic separately from the herbs. Cut off the long stems from the parsley and cilantro before roughly chopping them and oregano. Add the minced garlic and salt to the chopped herbs and finely mince everything together. Add the chilies to the pile and mince them into it. Transfer everything to a bowl.
  6. Pour in the vinegar and olive oil before stirring well. Cut the lemon in half and squeeze the juice into the bowl. Mix well, taste, and add salt if necessary. Cover and set aside.
  7. Place the beef in the oven to cook 10 minutes, turn it over and cook another 7-10 minutes. The outside should be browned, and the internal temperature should reach 125F for medium rare in the center.
  8. Transfer the meat to a cutting board and tent foil over it to keep it warm while it rests for 10 minutes.
  9. Slice the London broil against the grain if it’s a particularly tough piece of meat for a more tender bite and serve with chimichurri on top.
