Triple Citrus Shortbread Cookies with Lime Glaze

Ingredients

For Cookies:

  • 1 tablespoon combined lemon orange and lime zest
  • ½ pound 2 sticks unsalted butter, room temperature
  • ½ cup granulated sugar
  • 2 cups all purpose flour
  • ¼ teaspoon salt
  • 1 teaspoon lemon extract

For Glaze:

  • 1 cup confectioners sugar
  • 2 tablespoons lime juice
  • 1 tablespoon combined lemon orange and lime zest

Instructions

  1. Zest the citrus.
  2. Cream butter and sugar.
  3. Add dry ingredients,extract and zest.
  4. Divide dough.
  5. Slice dough.
  6. Dock dough.
  7. Bake cookies.
  8. Make glaze.
  9. Drizzle glaze and sprinkle zest.
