Healing Yellow Split Pea Soup

Ingredients

  • 2 tbs coconut oil
  • 2 cups minced onions
  • 5 cloves minced garlic
  • 1 cup diced carrots
  • 2 cups split peas
  • 3 celery sticks
  • 200 g diced potatoes
  • 300 g chorizo sausages - or any meat you prefer
  • 2.5 ltr water
  • 2 cups cashew milk - or any milk of your choice.
  • 3 stock cubes
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tsp turmeric
  • 1 tsp oregano
  • 1 tsp thyme
  • ½ tsp smoked paprika
  • 1 dried lemongrass stalk

Instructions

  1. Prep the ingredients, chop the vegetables and lightly rinse the split peas

  2. Heat the coconut oil in a large pot

  3. Saute the onions for 2 minutes

  4. Add the diced potatoes, carrots, and celery. Saute for a further 3 minutes

  5. Pour in the water, add 3 stock cubes, and the dried lemongrass

  6. Add the split peas

  7. Cook for 60 minutes

  8. Add the cut chorizo sausages, cashew milk, seasonings and spices

  9. Cook for a further 20 minutes
